Pastry Chef Margarita Kallas-Lee’s Mixed Berry Cobbler

One of the things I love best about summer is berry season. Every week I try to make some kind of dish from the berries in my garden whether it is for breakfast, lunch or dessert.

In this Chef In My Garden episode, pastry chef Margarita Kallas-Lee comes over and picks berries from my garden to create a delicious mixed berry cobbler. Admission: I’m nota baker. I just don’t like specific measurements, having to be super careful and all the various steps involved. But this recipe is gloriously simple—and incredibly delish.

Mixed Berry Cobbler

Topping:
1-1/2 cups Ap Flour
1/4 cup of sugar
1/2 cup yogurt
1-1/2 t baking powder
6 T unsalted butter
1/2 t salt
1/2 t vanilla
Pinch of cardamom
A few tablespoons of flour (set aside)

Filling:
2 cups strawberries
2 cups blueberries
2 cups raspberries
3 T corn starch
3/4 cup sugar
1/2 t salt
1 t vanilla
Citrus zest (of any kind)

Preheat your oven to 375F

For the topping, mix together flour, sugar, baking powder, salt, spices. Then add chunks of cold butter. Work the butter into the flour mixture with your hands until the entire mixture becomes almost sandy in texture, then add the yogurt. Once the mixture is completely together, break it up into small chunks and toss in flour so it is coated. Set aside.

For the filling, combine your choice of berries—just make sure it comes to about 6 cups altogether. Sprinkle sugar and salt over the top and zest of any citrus you prefer. (I like to use Meyer lemon.) Massage the berries until the berries start to release their juices. Add the corn starch and vanilla, mix until everything is totally incorporated.

When you’re ready to bake, use a vessel of your choice, I normally use a large baking dish, and bake the entire thing for about 30-40 minutes, rotating halfway. Or until the mixture is bubbling underneath and the topping is deep golden brown. Everyone’s ovens are different—so keep your eye on the cobbler while it’s baking!
